Scones can be sweet or savory and are perfect with a morning cup of coffee or tea. I can make a quick batch of scones any morning when I am craving a bakery-style scone. One of my favorite ways to work with blueberries is to bake them into something delicious even when it makes a great big mess. I use to not be a big fan of raw blueberries until I started baking with blueberries. I love adding blueberries into muffins or scones because the blueberries burst in the oven and the flavor is in every bite. For some reason, blueberries tasted better in a pastry and that was the only way I would eat them. It is probably because I am a baker and I could probably eat anything if it was a sweet treat! Now, I love to eat blueberries. They are a great snack fruit for me. I will leave a bowl of blueberries as I work and occasionally munch on them. Blueberries are filled with antioxidants that are very good to eat. They are not just delicious to eat, blueberries are also healthy to eat.
I made these scones because I had leftover blueberries that were going bad in my fridge. Fruit can go bad quickly and instead of wasting the leftover blueberries, I baked them into these scones.
Easy and Simple Very Berry Blueberry Scones
There are only 9 ingredients to these scones which make them so EASY to make! All you really need to bake any scone or biscuit is flour, baking powder, butter, and milk. You can easily switch up the rest of the ingredients to make try out different flavor combinations. This recipe is a classic blueberry scone because I just couldn't resist! Warm-bursting blueberries in a soft crumbly scone. These are so yummy!
Very Berry Blueberry Scones
Serving size: 6-8
Total Time: 45 minutes
6 tablespoons unsalted butter, cold
1 1/2 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup granulated sugar
1 egg
2/3 cups milk, whole is preferred
1/4 cup fresh blueberries
1 lemon, zested
Step 1: Preheat the oven to 375 degrees and line a baking pan with parchment paper.
Step 2: In a large mixing bowl, mix the flour, baking powder, salt, and sugar. Chop the cold butter into chunks and toss it into the bowl. With your hands, mix the butter into the dry ingredients. Crumble the butter into the flour mixture until pea-size balls form the butter-flour mixture.
Step 3: Add the egg and half the milk into the butter-flour mixture. Slowly mix until a dough forms. Add in more milk until the mixture comes together. You may need more or less milk at this step. The dough should come together into a ball and it should not be too sticky. Fold in the blueberries until the berries are evenly throughout. It is ok if some of the blueberries break up as you mix.
Step 4: On a lightly floured surface, take the dough ball and flatten it into a circle to cut about 6 triangle-shaped scones. You can make any shape you prefer at this step. Place on the baking sheet and bake for 10-15 minutes or until the scones have browned on top. Remove from the oven, cool, and then enjoy!
