The inspiration...

My girlfriend has recently gone dairy free because she has a newborn who is sensitive to dairy products. She has been experimenting with dairy-free desserts and that has inspired me to try out different vegan recipes like this vegan coconut chia pudding recipe. Chia pudding is a great healthy snack or breakfast treat to make because it is so filling to eat and tastes DELICIOUS. Chia seeds are easy to work with because they will expand and thicken in any liquid they are soaked in. Chia seeds are often referred to as a superfood because they are known to have a lot of nutritional value. They offer benefits to the body beyond their nutritional value such as lower cholesterol or improved gut health. I like to add chia seeds in my smoothies, yogurts, puddings, and even in some of my baked goods like brownies.


I love that this pudding recipe is so easy to make, it requires only 5 minutes of prep work and then the pudding will set in the fridge for a few hours. The flavor of this pudding is absolutely delicious with the creamy coconut flavor and a hint of vanilla flavor. It is easy to make different kinds of flavors with this pudding. I am going to try out a few chocolate variations as well!


A few tips...

  • making chia pudding without clumps - the trick to making chia pudding without clumps is to properly whisk the coconut and almond milk into the seeds. The pudding will start to thicken right away as you mix the milk and the chia seeds but you will want to refrigerate for a few hours to allow the pudding to form.

  • toppings - any fresh topping will taste amazing on this chia pudding. I love blueberries, almonds, and pepita seeds as a combination. Raspberries and strawberries would be a great combination as well.

  • storage - this chia pudding can last up to 4 days in the fridge in an air-tight container. I like to create individual serving-size jars in the fridge so that they are easy to grab on the go.

 

Vegan Coconut Chia Pudding

Serving size: 3 cups

Total Time: 2 hours

  • 1/2 cup black chia seeds

  • 3 tablespoons honey

  • 2 teaspoons vanilla extract

  • 1/8 teaspoon salt

  • 1 14 ounces can of coconut milk

  • 1 cup almond milk

  • Fresh berries, almonds, and pepitas for topping

Step 1: In a large bowl, mix together the chia seeds, honey, vanilla, salt, coconut, and almond milk. Make sure to mix the almond milk and coconut milk together until there are no clumps.


Step 2: Transfer the mixture to a jar or cover in the mixing bowl and transfer to the fridge to let sit for at least 2 hours. Serve with fresh berries, almonds, and pepitas. Enjoy!
