There is no such thing as a Rosh Hashanah dinner without a Jewish noodle kugel.
Noodle Kugel is a staple in most Jewish holiday dinners. I often get questions from my non-Jewish friends about what is noodle kugel and if you didn't grow eating it you don't know what it is. Kugel is a sweet egg noodle casserole. The key is you need to buy wide egg noodle pasta. Wide egg noodle pasta is a staple in any Jewish cook's kitchen. I know I always have an extra in my cabinet. You may not find wide egg noodles in your local grocery store but it is there. It will be down the pasta aisle often on the bottom shelf. The noodles are boiled and baked with some sugar, eggs, sour cream or milk, or cottage cheese. My family has never liked the kugels that are heavy with sour cream or cottage cheese so this recipe is a milder version of a traditional kugel. There are so many different variations of kugel and every family will have their own recipe with different ingredients. You can have a potato kugel, you can have cinnamon and raisins, you can have fruit and cinnamon. There are endless options and it's hard to mess it up. For this recipe, I use a little less sugar than the ingredients calls for because it is already sweet from the peaches. So try out a combination that you enjoy. This one is my favorite because it is slightly lighter kugel.
Sweet Noodle Kugel with Peaches

16 ounces (1 1/2 bags) wide egg noodles
1/4 cup butter
Zest of one lemon
3/4 cup sugar
1 1/2 teaspoon cinnamon
1 1/2 teaspoon salt
4 whole eggs, beaten
1 1/2 can peach halves, chopped into chunks
2 cup whole milk
2 cup corn flakes, slightly crushed
1/4 cup butter, melted
1/4 cup brown sugar
Step 1: Preheat oven to 350 degrees. Cook noodles until partially cooked, about 5 minutes. Drain noodles and add to a 9x14 baking dish. Add lemon zest and butter and mix to melt the butter.
Step 2: Pour in sugar, salt, and cinnamon. Stir to combine.
Step 3: Add beaten eggs, milk, and peaches. Stir to combine. Taste and adjust seasonings, adding more salt or sugar as needed.
Step 4: Place the corn flakes into a large plastic bag. Crush them slightly or you can crush them by hand. Melt butter and stir in brown sugar. Pour this in with the corn flakes and toss to combine.
Step 5: Sprinkle corn flakes over the top. Bake kugel for 45 minutes, or until golden brown. Serve warm.
