The inspiration...


I use to be addicted to Starbucks and it was not just for the coffee drinks. I loved all the delicious baked goods Starbucks has to offer and I still do. The different loaf breads are absolutely delicious! One of the good slices, I use to get all the time is the Lemon Loaf.

Starbucks Lemon Loaf is bursting with lemon flavor, it is so refreshing to eat. That sweet lemon glaze on top is the perfect icing for this wonderful loaf. I knew after eating the Starbucks version of this lemon loaf that I needed to try to re-create it. I finally did it! This version is fresh and baked with all-natural flavors. It is so much better than the Starbucks Lemon Loaf. The best part is now you can bake this lemon loaf whenever you want and you don't need to run to Starbucks. It will last the week stored in an air-tight container or wrapped well with plastic wrap. You can make it on the weekend and keep eating it as a snack all week long.


This loaf is the most irresistible light and fluffy flavor you will eat. I love the citrus flavor. I like to add lemon or lime flavor in many of my baked goods and cooking. Citrus is an addicting flavor. It is hard to stop eating this lemon loaf once you grab a nice warm slice!

A few tips...

  • Storage - this lemon loaf can last the week stored in the fridge in an air-tight container. Also, it can last on the counter for about 3 days sealed in plastic wrap.

  • Lemon vs lemon extract - I used only fresh lemon juice and zest in this loaf because the natural lemon flavor tastes a lot better than the artificial flavor from the lemon extract. For extra lemon flavor, you can add more zest to the batter.

  • Yogurt - the yogurt makes this cake very moist and fluffy. I use greek yogurt in many of my breads. You can use sour cream as a substitute.

  • The glaze - the glaze is like the cherry on top of this loaf! It is a sweet lemony surprise that makes this bread so addicting to eat. I start out by mixing the powdered sugar and lemon juice. Mix until you can get a smooth consistency. If the glaze is not coming together, I slowly add 1 tablespoon at a time of water to get the glaze to the perfect thickness. Pour the glaze on top once the bread has fully cooled to avoid the glaze from melting.

Serving size: 1 loaf, about 12 slices

Total Time: 1 hour and 30 minutes


  • 1 1/2 cup all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 cup sugar

  • 1/2 cup vegetable oil

  • 3 eggs

  • 1 cup yogurt

  • 1 teaspoon vanilla extract

  • 2 tablespoons lemon zest

  • 2 tablespoons lemon juice


Lemon glaze:

  • 1 cup powdered sugar

  • 1 1/2 tablespoons lemon juice

  • 1-2 tablespoons water

Step 1: Preheat the oven to 350 degrees. Prepare a loaf tin with parchment paper and use baking spray to stick the parchment paper to the pan. I like to use parchment paper in the baking tin so that the bread can be easy to remove after baking.


Step 2: In a small bowl, with your hands rub the lemon zest into the sugar and set aside.


Step 3: In a large mixing bowl, whisk together the eggs, sugar, lemon zest, and oil until combined. Next, add the yogurt, vanilla, and lemon juice. Mix until the batter is smooth.


Step 4: Fold into the mixture, the flour, baking powder, salt until the ingredients are fully combined.


Step 5: Pour the batter into the baking dish and bake for 45-55 minutes. Check on the bread at 45 minutes, a fork should come out smooth before you can remove the bread from the oven. If the bread needs more time, add it back into the oven for an additional 10 minutes. The lemon loaf will puff up slightly when it is ready and it will be lightly brown on top. Let the bread cool for about 10 minutes before icing.


Step 6: While the bread is cooling, prepare the lemon glaze. In a small bowl, mix together the powdered sugar and lemon juice until smooth. If the glaze is still clumpy, slowly add in 1 tablespoon of water at a time until smooth.


Step 7: Once the bread is cooled, slowly pour the glaze on top and use an offset spatula to smooth it out on top. You can let the glaze drizzle down the sides of the bread. Afterward, slice and enjoy warm! or warm up a few slices later.
