S'more Cookies

Melted chocolate, crushed graham crackers, and fluffy marshmallows stuffed inside a cookie. These cookies are the kind of cookies I dream about baking and eating. You need to try these because you will be craving these S'more cookies for days.



I am not a big camping person however, the one aspect I like about going camping is sitting around a warm fire and making s'mores. Melted chocolate and toasted marshmallows stuffed in between two graham crackers are so tasty. Who doesn't love eating this sandwich treat besides a warm fire?


I don't go camping that much but I do love eating s'mores. I remember as a kid I use to make s'mores over my gas stove in my kitchen. I would roast marshmallows over the stove fire and burn the marshmallows because I like the flavor of charred marshmallows. Then add the charred marshmallow and melted chocolate sandwiched between two graham crackers. I was craving homemade s'mores and I wanted to try this tasty treat inside a cookie. These cookies are so good filled and I am already obsessed.


This dough can come out very dry and crumbly with the graham crackers. I would recommend crushing the graham crackers in larger chunks. Don't be too concerned when the dough is more on the crumbly side the cookie still comes out tasting so good. You can use bigger marshmallows in the center and cut the large marshmallow in half. Most of the marshmallows will dissolve in the oven so you can add marshmallows on top of the cookie towards the end of the bake if you want extra marshmallow flavor. These cookies are addicting to eat. They are one of my favorite cookies that I have made because they are soft and gooey with a new flavor in every bite.

S'more Cookies

Serving size: 20 cookies

Total Time: 1 hour and 30 mins

  • 3/4 cup unsalted butter, browned

  • 1 cup light brown sugar

  • 1/3 cup granulated sugar

  • 1 egg + 1 egg yolk

  • 2 teaspoons vanilla extract

  • 3/4 teaspoon salt

  • 1 3/4 cups all-purpose flour

  • 3/4 teaspoon baking soda

  • 1 cup semi-sweet chocolate chips

  • 4 sheets Graham Crackers, crushed

  • a handful of mini marshmallows

Step 1: In a saucepan heat butter over medium heat to brown it. Make sure you are stirring the butter constantly until it begins to foam and turns a golden brown. When you smell the browned butter it should give off a nutty aroma. Take the butter off the heat and allow to cool completely before using.


Step 2: In a mixing bowl, combine the cooled brown butter, brown sugar, and granulated sugar, whisking until combined. Add the egg, egg yolk, and vanilla. Add the flour, baking soda, and salt, folding until just combined.


Step 3: Fold in the chocolate chips and graham crackers until just combined. Refrigerate dough for 30 minutes.


Step 4: Preheat oven to 350 degrees. Scoop out the cookies to create cookie dough balls. Place your thumb in the middle of each dough ball to place 2-3 mini marshmallows inside and then cover the marshmallows with dough.


Step 4: Place the cookies two inches apart on a grease baking sheet. Bake for 12 to 14 minutes or until the edges are golden brown, but the center is still gooey.
