S'more Brownies

Rich and decadent brownies with a layer of graham crackers and topped with roasted marshmallows. These S'more brownies are filled with chocolatey goodness and taste amazing!

Springtime is technically here and I am enjoying the nice weather outside. I hope the bright blue skies and the sunshine days are here to stay. In the spirit of the nice weather, I made these spectacular s'more brownies. This recipe came about because I wanted to jazz up my brownies base. I have been experimenting with making different kinds of brownies and I fell in love with this recipe combination. These brownies taste so good and they are rich in flavor, fluffy, moist, and filled with chocolate.


S'mores are a favorite campfire treat and easy to make when you are hanging out outside. You can make these S'more brownies for an outdoor trip because they are easy to make and easy to travel with. They will be a huge crowd-pleaser, everyone will enjoy eating these brownies.

A few tips to success:

  • Cocoa powder - I recommend using high-quality rich cocoa powder for these brownies because it will make a huge difference. I use Valrhona cocoa powder because their products are great for chocolate baking.

  • Eggs - There are a ton of eggs in this recipe which makes the brownies more cakey and fluffy. If you prefer fudgy brownies you can use fewer eggs.

  • Brown sugar - there is only brown sugar in these brownies to bring out an extra molasses flavor and to make the brownies moist.

  • Storage - these brownies will store well in an air-tight container for 3-5 days.

  • Add ons - these brownies taste delicious in a bowl of ice cream or topped with whipped cream if you like extra toppings.

  • Marshmallows - I used mini marshmallows on top and I added them in the last 5 minutes of the bake. I made sure the center was slightly wet before adding them on top so that I don't overcook. Then I removed the brownies once the marshmallows were golden brown on top. You can use the broiler for 1-2 minutes for extra char on the marshmallows but be careful not to burn or overcook the brownies.

S'more Brownies

Serving size: 16 brownies

Total Time: 1 hour

  • 1 1/4 cups unsalted butter

  • 2 1/2 cups light brown sugar

  • 4 large eggs, room temperature

  • 1 1/2 cups cocoa powder

  • 1 teaspoon salt

  • 2 teaspoons vanilla extract

  • 2/3 cup all-purpose flour

  • 6-8 graham whole graham crackers

  • 2 cups mini marshmallows

Step 1: Preheat oven to 350 degrees. Grease and line an 8x8 pan with parchment paper and set aside.


Step 2: Melt the butter in a microwave-safe bowl. In a large bowl, combine melted butter and sugar. Allow mixture to cool slightly.


Step 3: Slowly add in eggs one at a time, whisking in between each addition. Whisk until the mixture lightens in color.


Step 4: Mix in cocoa powder, salt, and vanilla extract. Fold in flour until just combined.


Step 5: Line the baking dish with graham crackers, laying them out flat. You may have to break a few in half to make sure the whole bottom fits. Pour mixture on top of the graham crackers and bake for 45-55 minutes, testing for doneness by inserting a knife into the center of the brownies beginning at 40 minutes. Depending on your oven and the size of your pan the brownies can take 60 minutes to bake. In the last 5 minutes, the top might be a little jiggly add the marshmallows and broil for 3-4 minutes, until golden brown. Remove from oven and let cool These brownies are best eaten right out of the oven but they do last 4 days in an air-tight container.
