The inspiration...

I dreamt about these cookies one night because I was thinking about eating a rice Krispie treat and a sugar cookie altogether. I knew I had to try out a recipe where I merged these two spectacular desserts together. I wanted this cookie to be more like a chewy and soft sugar cookie so this combination is 80% cookie and 20% rice Krispie treat. To make this combination I took a classic thick sugar cookie recipe, of course, added in rainbow sprinkles, swirled in marshmallow fluff, and then mixed in rice Krispies. It is a SPECTACULAR combination! The cookie is soft and chewy with an extra crunch from the Rice Krispies.


If you like cookies and you like Rice Krispie treats you will love these cookies! They are absolutely not plain in flavor and they are so addicting to eat. You will not be able to control yourself once you start eating these cookies. I don't have one favorite cookie because I love all sweets but for this week these are my favorite cookies to eat.

How to make these cookies?

Let's talk about how this cookie is so awesome! There are few techniques that I use to make sure this is the best cookie ever...with the perfect texture and flavor.


First, I make sure that I cream the butter for at least 2 minutes. Don't rush this step because we want the butter and sugar to fully combine. This will help the cookie rise and form that thick and chewy texture.


Second, I refrigerate my dough. I know there are moments when I am craving a quick batch of cookies and I look for recipes where I don't have to refrigerate my dough. However, this recipe is not one of those. You need to refrigerate the dough because this will prevent the cookies from spreading out and become a SUPER FLAT cookie. Personally, I hate flat cookies and I want all my cookies to be thick and chewy!


Last, lightly swirl in the marshmallow fluff to get nice swirls in the cookie after baking. Over mixing in the marshmallow fluff will make the fluff dissolve into the dough.

A few tips:

  • Storage - this cookie dough will last the week in your fridge and still make the perfect batch. The cookies will stay fresh in an airtight container for 2-3 days.

  • Baking - don't overbake these cookies because we want to create a soft and fluffy texture inside. I bake for 10 minutes and then let the cookies set for a few minutes out of the oven.

  • Rice Krispie - feel free to leave this out if want a classic rainbow sugar cookie or add more rice Krispies for an extra crunch. Lightly fold in these Krispies so you get a nice crunch in the cookie. You want to make sure the rice Krispie cereal bakes crunchy and light into the cookie.

Rice Krispie Treat Sugar Cookie

Serving size: 24 cookies

Total Time: 1 hour and 30 minutes

  • 1/2 cup unsalted butter

  • 1 cup sugar

  • 2/3 cup brown sugar

  • 2 eggs

  • 2 teaspoons vanilla

  • 2 3/4 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon sea salt

  • 1/4 cup rainbow sprinkles

  • 1 cup Rice Krispies

  • 1/2 cup white chocolate

  • 4 tablespoons marshmallow fluff

Step 1: With a standing mixer and paddle attachment, cream the softened butter and sugars for about 2 minutes. Make sure the sugar is fully combined before moving on to the next steps.


Step 2: Add in the eggs one at a time and then the vanilla. Mix until the ingredients are fully combined.


Step 3: Mix in the flour, baking powder, baking soda, and sea salt. Mix until dough forms. Remove the bowl from the standing mixer and fold in the sprinkles, white chocolate, and Rice Krispies. Once the mix-ins are evenly throughout the dough, lightly swirl in the marshmallow fluff. You want to make sure you see the marshmallow swirl in the dough. Don't overmix!


Step 4: Refrigerate the dough for about 30 minutes.


Step 5: Once the dough is ready, preheat the oven to 350 degrees. Prepare a baking sheet with parchment paper. Scoop 1-2 tablespoon of cookie dough for each cookie. Bake for 10-12 minutes or until the cookie is slightly underdone. Let cool for a few minutes before eating. Enjoy these fabulous cookies!
