Refreshing Coconut Soup

Light, nourishing, and soothing. This soup was easy to cook and so enjoyable to eat. This soup is flavorful with spices, soy sauce, and a citrus finish from the limes.



Sometimes during winter, I like to mix up my soups and veer away from the heavy squash and tomato soup rotation. I had a long day at work and I was looking for a meal that would be filling but also soothing. Coconut milk is creamy and smooth, it is a great ingredient to cook and it pairs well with lemongrass. The coconut milk in this soup gives off a relaxing and energizing feeling in every bite. It was the perfect dish to end my stressful day. The soup is loaded with sliced mushrooms and spinach so it is filled with great nutrients.


What is Lemongrass?

Lemongrass is an herb with a lemony scent that tastes zingy and refreshing. It is an herb that is in many Thai dishes. Fresh lemongrass is always preferred but it can be hard to find as a fresh ingredient at your local grocery store. Lemongrass tastes good in stir-fries, it gives off lemon and ginger flavors. My grocery store does not stock fresh lemongrass often so I found a lemongrass paste that I keep in my fridge as a replacement for fresh lemongrass. There are many Asian dishes that I cook which require lemongrass and I haven't found any great substitute besides this paste. However, if I am out of lemongrass and the paste I will add extra lemon or limes and ginger in the dish as a replacement.


 

Refreshing Coconut Soup

Serving size: 4

Total Time: 30 minutes

  • 1 15 ounces can coconut milk

  • 2 cups water

  • 1 vegetable stock cube

  • 4 tablespoons lemongrass paste

  • 1/2 onion, chopped,

  • 1 scallion, chopped

  • 2 garlic cloves, chopped

  • 2 tablespoons honey

  • 1 teaspoon red pepper chili flakes

  • a bunch of cilantro

  • 1 cup spinach, chopped

  • 1/2 cup mushrooms, sliced

  • 2 tablespoon soy sauce

  • 2 limes, juiced

  • soba noodles

Step 1: Saute the onions, garlic, and scallion for 3 minutes. Add red pepper chili flakes for 1 minute.


Step 2: Pour in coconut milk, water, vegetable stock cube. Stir and bring to boil for 10 minutes. Boil the soba noodles and set aside to cool.


Step 3: Add sliced mushrooms, chopped spinach, chopped cilantro, lime juice, honey, and soy sauce, simmer for 5 minutes. Taste, adjust seasonings, and serve warm on top of the soba noodles.
