Rainbow Oreo Stuffed Sugar Cookies

Chocolate cookie vanilla cream-filled oreo stuffed inside confetti sugar cookies. These cookies get better with every bite because you get a nice Oreo surprise in the center. I could eat this cookie for days!


These cookies elevate the classic sugar cookie and make every bite more interesting with a melty Oreo cookie stuffed inside. I love Oreo cookies and a warm Oreo cookie is even better! These cookies taste amazing warm and soft right outside of the oven.


I am often simple in my flavors and my dessert treats. I like classic chocolate chip cookies and sugar cookies. Recently, I have started taking my cookies to another level and trying different combinations. Stuffing cookies with different ingredients is so fun to make and even better to eat. You can make baking sugar cookies into an activity and bring your friends and family to help and stuff these cookies. I spend all my time in the kitchen and I love to create fun events with my friends where we are baking and cooking in the kitchen. I hope you enjoy making these cookies as much as I did!


A few tips:

  • Sprinkles - I used rainbow sprinkles to make a beautiful rainbow cookie but these will taste great with chocolate-covered sprinkles too!

  • Stuffing these cookies - to stuff these cookies you need to create individual cookie dough balls and place an Oreo in the center. Then cover the oreo cookie with another cookie dough ball to ensure that the oreo is completely covered by the dough. I would recommend once the sugar cookie is stuffed to take any excess dough around the edges to make sure these cookies don't become very large when baking.

  • refrigerate the batter - if you don't want the cookie to flatten as much in the oven you can refrigerate the dough for at least an hour to solidify the ingredients.

Rainbow Oreo Stuffed Sugar Cookies

Serving size: 12 cookies

Total Time: 30 minutes

  • 3/4 cup unsalted butter, room temperature

  • 2/3 cup brown sugar

  • 2/3 cup white sugar

  • 1 teaspoon vanilla extract

  • 1 egg

  • 2 1/4 cups all-purpose flour

  • 3/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup rainbow sprinkles

  • 12 Oreo cookies

Step 1: In a stand mixer with the whisk attachment, beat the butter and sugars until light and fluffy, about 3 minutes.


Step 2: Scrape down the bowl and add the vanilla extract and egg. Mix until completely combined, about 1 minute.


Step 3: Add the flour, baking soda, and salt and beat until just combined. Use a spatula, fold in the rainbow sprinkles.


Step 4: Use a spoon to form cookie balls. Flatten each dough ball and add an oreo in the center. Cover the oreo completely with cookie dough and place on a greased baking sheet.


Step 5: Place the trays in the fridge for 30 minutes. When ready to bake the cookies, preheat the oven to 350 degrees. Bake the cookies for 12 or until the edges are set but the centers are still gooey. Cool and serve warm.
