Peppermint Chocolate Chip Cookies

Updated: Jan 1, 2021

Peppermint has a minty and fresh flavor and when it is added to a chocolate chip cookie it tastes so delicious! These cookies are well balanced with melted semi-sweet chocolate chips and crushed candy cane pieces. They are chewy, gooey, and crispy! The perfect cookie to eat for an end of the year celebration.

For New Year's Eve, I want to make a new cookie to celebrate the last day of 2020. These peppermint chocolate chip cookies are great for a fun celebration. They are a classic chocolate chip cookie paired with a delightful fresh kick from the peppermint candy canes. Peppermint and chocolate are new flavors for me when paired together and I can't believe I have never tried them! They are now one of my favorite combinations in a cookie. You will absolutely love them once you try this cookie! I grew up eating lots of candy as a kid. I guess who didn't eat lots of candy when they were younger. My mom kept a candy drawer filled with sweet desserts. She even kept the drawer at a reachable height for all my siblings to easily grab a treat whenever we wanted. You would think that access to all the candy as a kid would have left me eating candy all day long however I was always good at eating candy in moderation. I love eating candy canes because they are fun to eat, long-lasting, and minty fresh! It is a brilliant idea to add a candy cane to a warm, chewy, chocolate chip cookie. If you really like peppermint flavor I would recommend crushing up more candy cane or adding peppermint extract.

When you are making these cookies make sure you crush up those candy canes into tiny pieces. You don't want to bite into the cookie and hurt your tooth! To crush the candy canes, I added the candy canes into a plastic bag and used the bottom of a cup to crush up the candy canes.

Check out how to make these in the video below:

Peppermint Chocolate Chip Cookies

Serving size: 16 cookies

Total Time: 1 hour 30 minutes

Source: Adapted from broma bakery

  • 3/4 cup unsalted butter, melted

  • 1 cup + 3 tablespoons brown sugar

  • 1 egg + 1 egg yolk, room temperature

  • 1 tablespoon vanilla extract

  • 1 3/4 cup all-purpose flour

  • 3/4 teaspoon baking soda

  • 1 teaspoon sea salt

  • 1 1/4 cups semi-sweet chocolate

  • 5 candy canes, crushed up

Step 1: In a mixing bowl mix the melted butter and sugar. Add in the egg, egg yolk, and vanilla extract. Mix well.

Step 2: Add to the wet ingredients the flour, salt, and baking soda. Fold in the chocolate and crushed up candy canes. Make sure the candy canes are crushed up into tiny bits. You don't want large chunks of hard candy cane in the cookies.

Step 3: Refrigerate the cookie dough for at least a half-hour to 1 hour.

Step 4: When the dough is ready, preheat the oven to 350 degrees and grease a cookie sheet.

Step 5: Roll the dough into cookie dough balls, placing them 2 inches apart on the prepared sheet. Bake for 11-12 minutes, or until the edges are just golden brown and the centers are gooey. Allow to cool and enjoy!
