Peanut Butter Chocolate Chip Cookies

Salty and creamy peanut butter mixed with chocolate is the perfect combination. I love gooey cookies with an extra kick of sea salt in every bite! This is a classic dessert but it is always a big hit. Last night was a peanut butter themed night. I used peanuts in my dinner dish and in my dessert. I love the flavor of peanuts and I enjoying cooking with these nuts in many of my meals. Peanut butter cookies are one of the best cookies you can make and I added chocolate chips because chocolate makes everything taste even better. Enjoy these yummy cookies!


 

Peanut Butter Chocolate Chip Cookies

Serving size: 2 dozen cookies

Total Time: 45 minutes

  • 1/4 cup unsalted butter, room temperature

  • 3/4 cup creamy peanut butter

  • 1/4 cup white sugar

  • 1 cup brown sugar

  • 1 egg + 1 egg yolk

  • 2 teaspoons vanilla extract

  • 1 cup + 2 Tablespoons flour

  • 3/4 teaspoon baking soda

  • 1 teaspoon sea salt (plus more for sprinkling the tops)

  • 1 cup semisweet chocolate chips


Step 1: Preheat the oven to 350 degrees and grease a baking sheet. Set aside.


Step 2: In a stand mixer fitted with the paddle attachment, beat the softened butter, peanut butter, white sugar, and brown sugar together until light and fluffy.


Step 3: Scrape down the bowl and add the egg, egg yolk, and vanilla extract. Mix well.


Step 4: In a separate bowl sift together the flour, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until just combined. Mix in the chocolate chips.


Step 5: Using a cookie scoop, scoop the dough out into 1 inch balls, dropping them 2 inches apart on the prepared cookie sheet. Sprinkle some extra sea salt on top. Bake for 10-12 minutes or until the cookies have puffed up and are set on the edges, but are still gooey in the middle.
