Oreo's are a guilty pleasure of mine because I can't stop eating them whenever I buy them. I think they are even better when they are baked into a cookie or a cake! I love making sheet cakes because they are simpler to bake and assemble compared to a layer cake. All you have to do is bake the cake and smooth out the frosting on top and it will look DELICIOUS to eat!
I wanted to play around with my classic vanilla cake recipe and I did by adding Oreo's into the cake batter. It came out tasting so good! When you have that craving for cookies and cream this is the perfect cake to whip up in no time.
Oreo Sheet Cake is so easy to make...
This vanilla cake batter does not require many ingredients and is fast to whip up for any celebration. It is one of my favorite base cake recipes to use because you can add any additional flavor elements to this cake base. Vanilla is a very neutral flavor base so it pairs well with almost anything.
For this Oreo cake, I made sure there was a perfect balance of sweetness between the cake base and Oreo cookies. The sour cream makes this cake extra moist. I love adding sour cream to my cakes. The batter has the perfect consistency to soak up those cookie pieces and so the Oreo cookies bake so well into the cake.

Texture and consistency of the cake - this cake is soft, light, and buttery and the creamy whipped frosting on top adds an extra texture element. The whipped cream frosting is lighter in consistency compared to other frostings like chocolate buttercream. The large chunks of Oreos folded in the cake and in the frosting add an extra element of texture to this cake. The larger chunks of Oreos come out perfectly soft when baked in the cake and then you get a nice crunch from the Oreos in the frosting.
Sheet cakes are very easy to make - sheet cakes are a lot simpler to bake than a layered cake and that is why I love baking sheet cakes. You don't need to level off the different cake layers, there is no fancy decor, and barely any assembly required. Slicing and serving this cake is so easy and this cake will feed a hungry crowd. It is the perfect cake for a celebration.
Storage - this cake lasts for 7 days in the fridge in an air-tight container. I found that the cake taste best the first day or the next day. The best way to make this cake last a few extra days is to heat up a slice of the cake in the microwave for a few seconds. Trust me! It will taste so good

Oreo Sheet Cake
Serving size: 10 - 12

2 1/2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
3/4 cup unsalted butter
1 1/2 cup granulated sugar
4 egg whites
1 cup sour cream
3 teaspoons vanilla
3/4 cup whole milk
1 1/4 cup chopped Oreos (about 14 cookies)
Oreo Frosting:
1 cup cream cheese, softened
3/4 cup powdered sugar
2 teaspoons vanilla
1 1/4 cups heavy cream
1 cup crushed Oreos (about 10 cookies)
Step 1: Preheat the oven to 350 degrees. Prepare a 9x5 baking pan with parchment paper or grease with baking spray.
Step 2: In a stand mixer with a paddle attachment, whip together the softened butter and sugar until light and fluffy, about 3 minutes.
Step 3: Next, add the egg whites and vanilla to the butter and sugar mixture. Whip for about 5 minutes until the ingredients have increased in volume. Then add in the sour cream and mix until combined. Don't worry if the batter is slightly chunky or appears as it has curdled.
Step 4: To the cake batter alternate between folding in the flour, baking powder, and salt with the whole milk. Mix until the ingredients are fully combined.
Step 5: Lastly, fold the chopped Oreos into the batter. Don't over mix the cake batter just fold in the Oreos until the cookies are evenly distributed. To chop or crush the Oreos, add the Oreos to a plastic back and use a mallet to smash the cookies. I prefer large chunks of cookies in the cake so I only lightly crush the Oreos.
Step 5: Pour the batter into the prepared baking pan and bake for 30-35 minutes. The cake is ready when the cake puffs up, the top will be lightly brown in color, and a fork can be inserted into the center and will come out clean. Remove from the oven and let it cool for about 10 minutes before icing.
Step 6: While the cake is baking, prepare the Oreo icing. In a large mixing bowl with a handheld mixer or a standing mixer, whip the softened cream cheese, vanilla, and sugar until smooth. Next, add in the whip cream and whip for about 5 minutes until the icing doubles in volume. It should thicken and form into an icing consistency. Next, fold in the crushed Oreos and set them aside for later. The icing can stay out for about an hour before using or you can put it in the fridge while you wait for the cake to bake.
Step 7: Once the cake is ready and cooled, use an offset spatula to ice the cake. Create small swirls in the icing and top with Oreo cookies. Slice, serve, and enjoy!
