The inspiration...


Last week, I bought a huge jar of Nutella at the supermarket and I knew I had to bake with it. In my house, if I don't use up all the Nutella quickly the whole jar gets eaten up. Nutella is a fabulous creation. The smooth chocolate hazelnut spread goes well with anything. Even if you want a spoonful to eat as a snack. I like to add Nutella to my cookies because it is always a huge hit. It is a glorious and addicting combination. These cookies are rich and decadent, filled with Nutella and chocolate. I literally dream about these cookies because they are so good!


Every bite is bursting with creamy chocolatey Nutella flavor. These cookies just melt in your mouth. I love all sweets and I don't like to brag about all my creations but these are 100 percent a winner! These cookies are HUGE, chewy, gooey on the inside, and crispy on the outside. It is the PERFECT cookie. I brought these to a friend's house and everyone was fighting for another bite.

A few tips:

  • Take your time - be patient with this recipe. It requires a few additional steps but it is all worth the wait!

  • Freeze the Nutella - this is a trick that works for all kinds of stuffed cookies. You need to freeze the center so that you can easily stuff the cookies.

  • Cooling the butter - after browning the butter on the stove, you have to let the butter cool before mixing it into the cookie batter. You don't want to cook the eggs with hot butter. That would be a disaster!

  • Storage - these cookies last for 5 days in an air-tight container. Also, the dough will last a week in the fridge if you did not want to make all the cookies at once.

Nutella Stuffed Chocolate Cookies

Serving size: 20 cookies

Total Time: 45 minutes

  • 1 cup unsalted butter

  • 3/4 cup Nutella

  • 1 cup brown sugar

  • 2/3 cup granulated sugar

  • 2 eggs

  • 2 teaspoon vanilla

  • 2 3/4 cups all-purpose flour

  • 2 teaspoon cornstarch

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 3/4 salt

  • 1/2 cup semi-sweet chocolate chunks

Step 1: Prepare the Nutella by lining a baking sheet with parchment paper. Then drop 2 teaspoon-sized Nutella dollops on the baking sheet. Create about 20 dollops of Nutella. Put the baking sheet in the freezer for about 15 minutes while you prepare the cookie dough.


Step 2: Brown the butter. In a medium saucepan under medium-high heat melt the butter.

Let the butter boil until it has slightly browned. The butter will boil, foam up and then slightly reduce itself. You should be constantly stirring the butter to make sure the butter does not burn. Once you see a few brown bits at the bottom of the pot, quickly remove them from the heat and pour them into a bowl. Let cool.


Step 3: Prepare the cookie dough. In a medium bowl, whisk the brown butter and sugars until smooth. If the butter is cooled down, add in the vanilla and eggs. whisk until smooth.


Step 4: Fold in the flour, cornstarch, baking powder, baking soda, salt until combined. Fold in the chocolate chunks. Add the dough to the freezer or fridge for about 15 minutes until cooled.


Step 5: Preheat the oven to 350 degrees. Take the dough and Nutella out. Prepare two baking sheets with parchment paper. Scoop 1 tablespoon of cookie dough, create a well in the center of the dough, add a dollop of the Nutella, add another tablespoon of cookie dough on top. Roll the cookie dough until the Nutella is completely covered. Repeat for all the cookies. Top each cookie with extra chocolate chunks. Bake for 12-14 minutes, until the edges are brown and the cookie has puffed up. Let cool and enjoy!
