Mini Vanilla Donut Cakes! I love any dessert that starts with the word "Mini." These moist mini vanilla donut cakes melt in your mouth with every bite.
I remember devouring those mini powdered donut balls from Dunkin Doughnuts after every soccer practice as a kid. Why would I want to stop eating those powdered sugar munchkins? You might have gone for the chocolate glazed doughnut or the cinnamon sugar but I would always snag those powdered sugar vanilla doughnuts. Vanilla flavored desserts are a staple and my first love of sweets. I was obsessed with vanilla flavor ice cream, cookies, and cakes and a kid. This cake is the perfect mini vanilla donut dessert and it tastes even better than those powdered sugar munchkins I use to eat. I also love that this is a mini cake and is easily shareable with friends.
This cake is loaded with a thick layer of confectioners sugar. You can an extra sweetness from the confectioner's sugar in every bite. There is a hint of nutmeg in the batter that gives a small spice flavor.
A few tips:
Pan size - I used an 8x8 inch square pan to make thick and mini pieces of this donut cake. You can use any 8 or 9-inch circle cake pan with the same measurements. To use a bundt pan you will need to double the batter recipe so that there is enough batter for the pan. The cake will take longer to bake about 50-60 minutes.
Confectioners sugar - I did one of those things that you shouldn't do when you start baking a cake which is I did check if I had all the ingredients. After I made the cake, I realized I didn't have any confectioners sugar! A quick tip I learned is that you can make confectioners sugar with granulated sugar. All you need to do is to blend 1 cup of granulated sugar with 1 teaspoon of cornstarch and BAM! you have made confectioners sugar.
Browned Butter - for a richer flavor cake you can brown the butter instead of melting the butter to mix into the cake.
Cinnamon Sugar Donut Cake - to replace the confectioner's sugar topping for this cake you can make a cinnamon sugar donut cake.

Mini Vanilla Donut Cake
Serving size: 12 pieces

3/4 cup granulated sugar
2 large eggs
1 cup sour cream
1/2 cup unsalted butter, melted
1 1/4 teaspoon freshly grated nutmeg
1 teaspoon vanilla extract
3/4 teaspoon salt
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
Topping:
1 tablespoon unsalted butter, melted
3 tablespoons confectioners’ sugar
Step 1: Preheat the oven to 350 degrees. Grease an 8-inch square baking pan with nonstick spray.
Step 2: In a large bowl, whisk the granulated sugar and eggs until pale, about 1 minute. Add the sour cream, melted butter, nutmeg, vanilla, and salt. Whisk until smooth.
Step 3: Add the flour, baking powder, and baking soda. Whisk until combined.
Step 4: Pour the batter into the pan and bake the cake until puffed and golden or until a fork inserted comes out clean, 25 to 35 minutes. Once ready, set the baking pan on the counter to cool for about 15 minutes.
Step 5: When the cake is ready to serve, brush the top with the melted butter and dust with the confectioners’ sugar. You want to cover the whole cake with confectioners’ sugar – it will be completely white on the top. The cake stores well covered for about 3 days however, there might be a need for fresh dusting in the following days.
