The inspiration...

My friend asked me this weekend whether I preferred baking or cooking more. My answer was, it depends. It depends on my mood and the day you catch me. The majority of this blog showcases my baked goods because I am not going to lie I am addicted to baking desserts. But! I do love cooking. Lately, my mood has been trying out different bakery goods. The scone, is a classic, pastry you would buy at a coffee shop to pair well with a warm cup of tea or coffee. I love scones because they are not super sweet so they have a good balance of sweet to saltiness ratio.

This recipe came from the abundance of chocolate chips in my pantry. I have been trying out different brands of chocolate chips to find which one I like the most. The dark chocolate chips in these scones are from the famous brand Ghirardelli. Ghirardelli is one of my favorite chocolate brands because the chocolate chips taste pure and oh so RICH!

These scones are super easy to make. To be honest, scones are so simple that it is very hard to mess up even for an inexperienced baker. Here is a quick explanation of how to make these delicious scones!

The very simple details...

I recommend starting with the butter. Take the butter right from the fridge so it is extra cold. Chop it up into cubes. Keep the butter in the fridge as you measure the other ingredients.

Now, measure out the dry ingredients to mix the flour, baking powder, salt, and sugar. Add the dry ingredients to a large mixing bowl. Toss the chopped butter into the mixing bowl and with your hands crush the butter into the flour until small peas size pieces form. You want a nice shaggy dough. Pour in the milk and mix until a dough forms. Fold in the chocolate chips. Scone dough is now made!

Next, turn the dough onto a cutting board or workable surface and form a circle or square shape. If the chocolate chips are popping out, it is ok to push them back in. I find that scones always come out looking and tasting delicious so don't worry about the mess or the shape.

Cut the scones into either 6 triangles or 8 squares. You can have some fun here and make different shapes. Sometimes I use my circle sugar cookie cutters to make circle scones. Then, BAKE. and yes it is that simple!

Eat them warm, right out of the oven, with that melted chocolate bringing you in for another bite. These scones are so GOOD!

Chocolate Chip Scones

Serving size: 6-8

Total Time: 45 minutes

  • 6 tablespoons unsalted butter, cold

  • 1 1/2 cup all-purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1/4 cup granulated sugar

  • 1 egg

  • 2/3 cups milk, whole is preferred

  • 1/4 cup semi-sweet chocolate chips

Step 1: Preheat the oven to 375 degrees and line a baking pan with parchment paper.

Step 2: In a large mixing bowl, mix the flour, baking powder, salt, and sugar. Chop the cold butter into chunks and toss it into the bowl. With your hands, mix the butter into the dry ingredients. Crumble the butter into the flour mixture until pea-size balls form the butter-flour mixture.

Step 3: Add the egg and half the milk into the butter-flour mixture. Slowly mix until a dough forms. Add in more milk until the mixture comes together. You may need more or less milk at this step. The dough should come together into a ball and it should not be too sticky. Fold in the chocolate chips until the chips are evenly throughout.

Step 4: On a lightly floured surface, take the dough ball and flatten it into a circle to cut about 6 triangle-shaped scones. You can make any shape you prefer at this step. Place on the baking sheet and bake for 10-15 minutes or until the scones have browned on top. Remove from the oven, cool, and then enjoy!
