The inspiration...

It is almost valentines day and I am always looking for a good chocolate dessert to bake. These are the perfect dark chocolate brownies to bake for Valentine's day. It is an easy dessert to make and these brownies will make your Valentine's celebration extra special.


These gluten-free and dairy-free brownies are the BEST healthy brownies. It took me some time to develop a recipe that made these taste and look AMAZING! The key to a perfect brownie is texture and flavor. To make the texture perfect, I found a special technique to form that chewy brownie consistency and that beautiful crinkly top. The key is to whip the egg and sugar together until it has doubled in volume and is frothy in consistency.


You must try this recipe! You will be addicted to these brownies like I was. I made them three times this week because I could not get enough.


The first step to making these AMAZING BROWNIES...


The first step is to beat on high the eggs and sugar in a large bowl for about 5 minutes. The mixture will double in volume, become pale in color, and be a nice frothy consistency. Be patient at this step the mixture will come together. This step will create that beautiful crinkly top on the brownies that we all love to see. It also aerates the batter to create volume to help the brownies to rise and become thick.

The next step...


Gently fold in the dry ingredients and the chocolate chips. You don't want to over mix the batter here because you want to keep the batter light. The batter will form a nice shiny and glossy look. The rich chocolatey batter tastes so DAMN good! I know I could not stop grabbing a taste of this batter.

The baking step...


Pour the batter into an 8x8 baking pan that is lined with parchment paper and then BAKE! The batter will appear thick in consistency. Don't worry about that. It will bake into a beautiful rich brownie! You can overbake these brownies. With gluten-free baked goods, the flour substitute absorbs liquid faster than regular flour. It is important to take these brownies out when they are just underdone so they don't dry out.

  • 1 cup dark chocolate, melted (8 ounces)

  • 1/3 cup coconut oil, melted

  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract

  • 3 eggs

  • 1/4 cup cocoa powder

  • 1/2 cup almond flour

  • 1 teaspoon coffee grounds

  • 1/2 teaspoon salt

  • 1 cup chocolate chips

Step 1: Preheat the oven to 350 degrees. Grease an 8x8 square brownie pan or line the pan with parchment paper.


Step 2: Melt the coconut oil and chocolate together in the microwave. Be careful not to burn the chocolate. I microwave the chocolate in 30-second increments and stir each time to check if it is melted. Set this aside to cool while you prepare the other ingredients.


Step 3: In a stand mixer with a whisk attachment, beat the eggs and sugar until the mixture doubles in volume, about 5 minutes. This is a very important step because it will help the brownies rise slightly and form that nice crackly layer on top.


Step 4: To the eggs and sugar mixture, add vanilla and cooled melted chocolate. Make sure the chocolate is cooled because you don't want to cook the eggs. Whisk until just combined.


Step 5: Fold in the cocoa powder, almond flour, coffee grounds, and salt. Fold into the batter until just combined. You don't want to over mix the batter.


Step 6: Lastly, fold in the chocolate chips until evenly distributed. Pour the batter into the brownie pan. Bake for 25-30 minutes. The brownies are ready when they are set in the oven, form a crackly surface, and a fork comes out clean. Don't overbake because these brownies will dry out easily. When ready, remove from oven and let it sit for 5 minutes. Slice and enjoy!
