Creamy Peanut Butter Cookies

Updated: Apr 2, 2021

Peanut Butter cookies are soooo delicious!!! These cookies are loaded with peanut flavor, slightly salty, and so sweet.

Who can resist creamy peanut butter cookies? My partner is addicted to eating peanut butter. We have to buy peanut butter in bulk in my house because it goes so fast. I love peanuts and adding a peanut flavor in many of my baked goods and even my dinner meals. These cookies are perfect to make on the weekend if you are looking for a fun activity to do. I know it seems easy to just grab a spoonful of peanut butter and call it a day but these cookies come out tasting so good. I gave these cookies to the surgical residents at the hospital my partner works out and they were a huge hit! I don't think cookies could have gone any faster at 6 am!

The flavor of peanut butter cookies is hard to resist. These cookies are so soft and easy to make and I love that they taste like you are eating peanut butter out of the jar but in cookie form. They are perfectly salty and sweet and will satisfy that peanut butter craving. This is the best peanut butter cookie you will ever have! Trust me. Try these out! The dough comes together pretty quickly and you don't even need to refrigerate the dough.

A few tips:

  • Shaping the cookies - I like to use a fork to form a criss-cross look because it makes the cookies look so good to eat.

  • Peanut butter - I buy a ton of creamy peanut butter normally the Jiff brand. These cookies would taste even better if you have natural peanut butter with less sugar. The natural peanut butter is slightly drier so you will have to add less flour into the dough. You can also use a crunchy peanut butter this cookie if you like an extra crunch.

  • Mix-ins - I added Reese's peanut butter chips because I love to have a cookie that is soft inside and has a melted creamy taste in every bite. If you prefer to have a crunch you can add crushed peanuts to the dough or you can add chocolate chips.

  • Sea salt vs salt - I used sea salt for this recipe because I love extra salty peanut butter. Regular table salt won't give off as strong a salty taste as sea salt if you want a milder flavor.

Creamy Peanut Butter Cookies

Serving size: 40

Total Time: 30 mins

Source: Adapted from the Cookie Book by Rebecca Firth

  • 8 tablespoons unsalted butter, room temperature

  • 1 1/4 cups peanut butter

  • 1 1/2 cup brown sugar

  • 1/2 cup granulated sugar

  • 1/3 cup vegetable oil

  • 3 teaspoons real vanilla extract

  • 2 large eggs, room temperature

  • 2 3/4 cups all-purpose flour

  • 1 teaspoons baking powder

  • 1 teaspoons baking soda

  • 1/2 teaspoons salt

  • 3/4 cup Reese pieces chips

Step 1: Preheat the oven to 350 degrees and prepare baking sheets with parchment paper.

Step 2: In an electric stand mixer fitted with the paddle attachment, add the softened butter, sugar, and brown sugar. Mix until creamy and smooth for about 3 minutes. Add in the eggs, oil, and vanilla, scraping down the sides until everything is incorporated.

Step 3: Add in the peanut butter and mix until smooth. Then add in the flour, baking powder, baking soda, and salt. Mix until the ingredients are just combined.

Step 4: Roll the dough into balls using a tablespoon or a cookie scoop. Take a fork and gently press down the cookie to form four lines of markings and then turn the fork 90 degrees to form a criss-cross imprint. Bake the cookies for 10 minutes. Let cool and enjoy!
