Coconut Lime Bread

This Coconut Lime Bread is sweet, light, and zesty in flavor. This coconut lime bread is a great treat to bake for springtime. It is a light and moist bread that is great to have for breakfast or a small gathering.

The inspiration...

I didn't have much in my kitchen this week. I was running low on many of my pantry items. I was reorganizing my pantry and I found two large bags of shredded coconut. I keep shredded coconut because I like to add it to my stir fry dishes. Coconut is high in fat and healthy to eat so I often like to cook with it. I almost never use coconut in baked goods but I do love the flavor of coconut. I had all this extra shredded coconut so I made this quick bread to try out the flavor and texture in a sweet treat. I was inspired by Smitten Kitchen's recipe to make a simple coconut flavored bread. I am a big fan of Smitten Kitchen recipes, as many of you who read my recipes can tell I often use her recipes for inspiration. Smitten Kitchen has many great vegetarian meals and has spectacular desserts. Finally! The weather has started to get nice out and I was dreaming about drinking both Margarita and Pina Coladas at the beach. I know. These are very different drinks but both my favorite drinks to drink beachside. That is what inspired me to mix coconut and lime in this bread and it came out AMAZING!


If you love coconut and you love lime you will love this combination together. These flavors are simple and classic. Every bite is filled with delicious goodness!

What is so good about this bread?

The bread is less spongy than a typical banana bread and lighter in sweetness. There is a lot of texture in every slice from the shredded coconut flakes. This bread is not overly sweet because there is no sweetness from the coconut and only 1 cup of sugar. The lime flavor is very subtle and pairs so well with coconut. I would even add more lime zest in the batter to get an extra citrusy flavor.


This bread is light and delicious in flavor. The melted butter on top of each slice is so GOOD! I would highly recommend adding butter on top. I love that this bread is easy to make and will last the week on my kitchen counter. It has the perfect combination of springtime flavors. Enjoy the lime and coconut flavors!

A few tips:

  • Citrus flavor - you can substitute the lime with lemon or even orange but that will change the flavor combination. I would recommend adding extra lime juice and lime zest if you love citrus flavor like me!

  • Coconut flakes - I used shredded coconut flakes because I don't like large chunks in my bread. You can also use larger coconut flakes to really taste the coconut in every bite.

  • Storage - this bread will store in an air-tight container for a week on the kitchen counter. I like to wrap my bread in plastic wrap and then aluminum foil to make sure it stays extra moist.

  • Butter - I highly recommend doing the extra step and browning the butter. It adds an extra element of richness to the bread that you will absolutely love! You can use regular melted butter if you are in a rush.

Coconut Lime Bread

Serving size: 1 bread loaf

Total Time: 1 hour and 40 mins

  • 2 large eggs

  • 1 1/4 cups milk

  • 1 teaspoon vanilla extract

  • 2 1/2 cups all-purpose flour

  • 1/4 teaspoon salt

  • 2 teaspoons baking powder

  • 1 teaspoon ground cinnamon

  • 1 cup granulated sugar

  • 3/4 cup unsweetened shredded coconut

  • 6 tablespoons unsalted butter, melted and browned

  • 2 teaspoons lime zest

  • 1 tablespoon lime juice

Step 1: Preheat oven to 350 degrees. Grease a 9x5 loaf pan.


Step 2: In a small bowl, whisk together eggs, milk, vanilla, sugar, lime zest, and juice.


Step 3: Fold in the flour, cinnamon, baking powder, and salt. Mix until just combined. Add the browned butter, and stir until just smooth. Be careful not to overmix. Fold in the coconut flakes.


Step 4: Pour batter into loaf pan and bake until a toothpick inserted into the center comes out clean, anywhere from 1 to 1 1/4 hours. Cool in pan for five minutes, before turning out onto a cooling rack. Sprinkle with powdered sugar and lime zest. Serve with fresh melted butter on each slice. Enjoy!
