Cinnamon Roll Cookies

Beautiful swirls of cinnamon sugar in a sweet sugar cookie base, these cookies are soft and delicious to eat! They are the BEST cookie version of a cinnamon roll.

The inspiration...


I had a craving for delicious cinnamon rolls but I know they take too much time to make so I decided to make these cinnamon roll cookies. Cinnamon roll cookies are a little bit quicker to make and they have that sweet cinnamon sugar flavor swirled on the inside. I love cinnamon sugar desserts. From snickerdoodle cookies to cinnamon rolls to churros. All of these desserts taste so good! These cookies are absolutely EPIC filled with all lots of cinnamon sugar. You must try out these cinnamon roll cookies! They are fun to make and it can be a great activity to bake these cookies over a weekend.


The baking process


The first step is to make the classic sugar cookie base by creaming butter and sugar together until light and fluffy. Then, add in eggs and vanilla extract until combined. Next, fold in the dry ingredients until the cookie dough forms. The dough needs to refrigerate for about 30 minutes so the dough can firm up. This will make it easy to work with the dough to roll out and shape into the cinnamon roll cookies.


Once the dough is ready to work with, roll out the dough into a large rectangle until it is 1/4 inch thick. Next, spread melted butter on the surface leaving the edges empty, and then sprinkle lots of cinnamon sugar on top.

The rolling step

Lastly, pinch the edges of the rectangle and tightly roll the dough into a log. Roll the dough slowly and pinch tightly as you roll. The dough will crack slightly as you roll which is ok it will still come out perfectly!


Slice the rolled-out dough into 1/2 inch cookie pieces and place it onto a baking sheet to bake for about 10 minutes.

What makes these cookies taste so good?


Cinnamon sugar desserts are always on my mind and these are perfect to add to my cinnamon sugar recipe collection. These cookies look exactly like mini cinnamon rolls. They are cute and tasty to eat!


These cinnamon roll cookies are a classic sugar cookie recipe mixed with cinnamon sugar on the inside and topped with a sweet powdered sugar glaze. I could not stop eating these cookies because they taste so DAMN GOOD!

Cinnamon Roll Cookies

Serving size: 20 cookies

Total Time: 2 hours and 10 minutes

  • 2 cups of all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 egg

  • 1 teaspoon vanilla extract

  • 3/4 cup granulated sugar

  • 3/4 cup unsalted butter

Cinnamon-sugar filling:

  • 2 tablespoons unsalted butter, melted

  • 1/4 cup granulated sugar

  • 1 tablespoon cinnamon

Icing:

  • 1/2 cup powdered sugar

  • 2 tablespoons milk

  • 1 teaspoons vanilla


Step 1: Prepare the sugar cookie dough. In a standing mixer with a paddle attachment, mix together the butter and sugar until smooth, about 3 minutes.


Step 2: Add in the egg and vanilla extract. Mix until smooth, about 2 minutes. Fold in the dry ingredients, until dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes to an hour or until the dough has firmed up.


Step 3: When the dough is ready, lightly flour a surface and use a rolling pin to roll out the dough into a rectangle shape and about 1/4 inch thickness. You want to work quickly before the dough gets too soft to work with.


Step 4: Melt 2 tablespoons of butter and spread the butter on top of the rolled-out cookie dough. Sprinkle the sugar and cinnamon on top. Tightly roll the cookie dough into a log shape using the long side of the rectangle. The dough may crack slightly as you roll which is ok. Take the log and refrigerate the dough for about 30 minutes.


Step 5: Preheat the oven to 350 degrees and line a baking sheet with parchment paper. Take out the sugar cookie log and slice it into 1/2 inch slices. Layer each rolled-out cookie onto the baking sheet. Bake for 10 minutes until the cookies are lightly browned.


Step 6: Make the icing while the cookies are baking by mixing powdered sugar, milk, and vanilla together. Mix until smooth. You may need to add extra milk until the icing forms.


Step 7: When the cookies are cooled, ice each cookie with a nice drizzle of the icing. Let it set and enjoy!
