Cinnamon Coffee Cake with Chocolate Chips

Sweet and delicious coffee cake to wake up to in the morning is the best kind of treat. It is brown and crispy on the outside and light and fluffy on the inside. The cake is filled with cinnamon sugar flavor paired with melted chocolate. It is so so GOOD!


Coffee cake is one of those sweet treats that you can make on the weekend and it will last the week to be eaten every morning with a warm cup of coffee. I like making a coffee cake to keep in the center of my kitchen table so there is always something sweet to snack on. I didn't eat coffee cake growing up. I discovered my love for coffee cake when I was in college practically living in coffee shops. My go-to order was a chai tea latte with a slice of coffee cake while I studied all day. The irony is I didn't like coffee in college but I loved the coffee cake so I ate it with tea. To be honest, a slice of coffee cake tastes good with any warm drink whether you are eating it in the morning, afternoon, or evening.


This recipe is a little different than a traditional coffee cake because it is baked in a bundt pan, loaded with chocolate chips, and filled with coffee grounds in the cake. I know that that it is so enjoyable to eat a plain rich cinnamon sugar coffee cake with a cup of coffee. To me, it seems odd that there is no coffee flavor in COFFEE cake. I added fresh coffee grounds to this cake and it came out so DAM good. I love that there is a hint of that coffee flavor as a eat this cake and drink coffee with it.

Why coffee cake is my go-to quick bread?

I love how simple and easy coffee cake is to make and it doesn't require many ingredients. All the ingredients are always in stock in my pantry. You don't have to add any icing to this coffee cake or do anything extra after it is baked. You layer the cinnamon sugar into the batter, bake the cake, and enjoy the cakey goodness. You can cut up the coffee cake into small bite-size pieces and serve them to guests or you can enjoy a nice big slice with your tea or coffee. Coffee cake is so versatile you can eat and serve it for any occasion. Once you make one cake you will be as obsessed as I am.

A few tips to success:

  • Storage - the cake will store sliced or whole in an air-tight container in a room temperature environment. You can also wrap the cake in plastic wrap to keep it fresh and moist. I keep mine wrapped tightly on my kitchen table so I can grab a slice when I am having a craving for something sweet.

  • Coffee grounds - I added a hazelnut blend coffee to this cake because I love that nutty flavor. Any type of coffee will work to add to this cake. You can swap out the coffee grounds for espresso powder if you want a stronger flavor. You can also leave this ingredient out completely. The cake will still taste delicious!

  • Cinnamon sugar - the cinnamon-sugar mixture added inside the cake and on top. I pressed the cinnamon sugar into the batter. You can also make a nice swirl with the cinnamon sugar if you want the flavor evenly distributed in the cake.

  • The batter - the batter is very thick and will come out a little lumpy. Don't over-mix the batter because it will come out too dense. Once the ingredients are mixed together the batter is ready to be baked.

Cinnamon Coffee Cake with Chocolate Chips

Serving size: 1 bundt cake

Cake:

  • 1 cup vegetable oil

  • 1 1/2 cups granulated sugar

  • 3 large eggs

  • 1 1/2 cups plain Greek yogurt

  • 2 teaspoons vanilla extract

  • 3 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1 teaspoon baking soda

  • 1 tablespoon coffee grounds

  • 1 1/2 teaspoons salt

  • 2 cups semi-sweet chocolate chips

For The Filling:

  • 1 cup brown sugar

  • 1 1/2 tablespoons cinnamon

Step 1: Preheat the oven to 375 degrees and grease a bundt pan.


Step 2: In a large bowl, whisk together oil, sugar, yogurt, eggs, and vanilla. Fold in the flour, baking powder, baking soda, coffee grounds, and salt until the cake batter comes together.


Step 3: Fold in the chocolate chips, until just combined. Make sure not to over-mix the batter. The mixture will be thick and clumpy.


Step 4: Make the filling by mixing brown sugar and cinnamon. Pour half of the batter into the bundt pan. Sprinkle half to 3/4ths of the mixture of the brown sugar mixture over the batter and swirl or press the mixture into the batter. Pour in the rest of the batter on top and swirl the rest of the brown sugar mixture into it.


Step 5: Bake for 55-60 minutes, until a fork or toothpick comes out clean when inserted into the cake. Let the cake cool then flip and enjoy!
