Chocolate Pecan Caramel Cookies

These chocolate pecan cookies stuffed with caramel candy are absolutely delicious! These cookies have it all with large rich melty chocolate chunks, crunchy pecans, and sweet caramel surprise inside.

The inspiration...

Happy New Year! I have tons of new recipes to share this year especially new cookie recipes. I love testing out new cookie recipes because I love enhancing a basic cookie recipe. This is the perfect cookie to start the new year. These cookies have a rich brownie-like consistency mixed with nutty pecans. They remind me of a chocolate pecan pie but in cookie form. I don't often add nuts to my cookies because nuts are not my favorite flavor, however, these cookies need the crunchy texture for the pecans. They add a nice crunch and saltiness to the much-needed sweet brownie cookie base.


A few years ago, I went through a brownie obsession phase. All I wanted to do was make the perfect brownie recipe. I ended up messing with the batter and attempting to make cookie dough balls. Surprisingly it worked! I turned brownie batter into cookie dough and it came out tasting spectacular with the perfect gooey consistency. I have to say I am a sucker for soft and gooey cookie centers. I liked my cookies crispy and crackly on the outside with that perfect gooey center. I took this amazing brownie batter recipe and added chocolate chunks and pecans to make these glorious cookies!

Why these cookies are so good?


These cookies have chocolate in the base, chocolate chunks, and crunchy pecans mixed in. What else do I need to say to convince you how amazing these cookies taste. If you are looking for a cookie to make for a celebration, these are the perfect cookies for you! Try these out!

A few tips...

  • the batter - the batter will be wetter than a traditional cookie dough. You will need to refrigerate the dough for at least an hour before baking. You can freeze the dough for 30 minutes. I would check on the dough when it is in the freezer to make sure it does not get too hard. You cant the cookie dough harden enough so you can form cookie dough balls.

  • Pecans - I did a rough chop of the pecans so that I could have some extra chunks in the cookies. You can save some extra-large pecan chunks to place on top of the cookies to make them look beautiful.

  • Dark chocolate - make sure to use high-quality chocolate for this recipe. It will make all the difference with these cookies. I like to use Guittard for all my chocolate products.

  • Caramel candies - these cookies have a surprise inside of caramel candies. These cookies are good on their own but I like to add an extra sweet surprise by stuffing these candies inside.

Chocolate Pecan Caramel Cookies

Serving size: 20 cookies

Total Time: 1 hour and 20 mins

  • 3/4 cup all-purpose flour

  • 3/4 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/4 cup unsalted butter

  • 1 1/4 cup sugar

  • 3 eggs

  • 1 1/2 cups dark chocolate chips

  • 1/2 cup semi-sweet chocolate chips

  • 1/2 cup pecans, chopped

  • 20 caramel candies

Step 1: Melt the chocolate and butter in a saucepan or microwave until smooth. Set mixture aside to cool.


Step 2: In another large mixing bowl, mix the granulated sugar, baking powder, and salt.


Step 3: Add the eggs and whisk until fully incorporated and the mixture resembles a thick batter and no dry ingredients remain.


Step 4: Slowly whisk in the melted chocolate-butter mixture. Make sure the chocolate mixture is not too hot when you are pouring it into the bowl.


Step 5: Fold in the remaining chocolate chips and the pecans with a spatula. Place the dough in the fridge for at least an hour before baking.


Step 6: Preheat the oven to 350 degrees. Add parchment paper to a baking sheet and scoop 1 tablespoon of cookie dough, make an indent into the dough, place a caramel candy inside, and place another 1 tablespoon of cookie dough on top to cover the caramel, and place on the cookie sheet. Place the cookies about 2 inches apart. Bake for 10 minutes, until the cookies have browned on the outside and are soft on the inside.
