The inspiration...

I often have an intense craving for chocolate and peanut butter because it is the best sweet and salty combination. I wanted to make Reese's peanut butter cup cookies however, I was out of Reese's chips. I went for the next best thing which is to mix peanut butter into a chocolate cookie. The best part about these cookies is that they are so easy to make. You can whip them up fast when you are having craving something sweet. Peanut butter goes fast in my house because we all love it so much. It is a staple in my pantry to always have a backup peanut butter jar.

These cookies are the perfect cookie for those peanut butter lovers out there! They are soft and rich with an intense peanut butter flavor. Peanut butter can make the dough a little drier than traditional cookie dough. If you are using any natural peanut butter you want to make sure there are enough oils in the peanut butter or add a little extra oil to make the dough smooth.

A few tips:

  • Peanut butter - I used Smucker's creamy peanut butter because it is my favorite kind. It does not have any added salt or sugar in it. It tastes like pure roasted peanuts. Make sure to really mix up your peanut butter so that it gets to a smooth consistency.

  • Salt - you can add extra flakey sea salt on top to get a nice balance of sweet and salty flavor. That is my favorite when you get an intensely sweet flavor and then you get hit with a few bites of saltiness.

  • Storage - these cookies will last for 4 days in an air-tight container or you can store the dough in the fridge for the week.

Chocolate Peanut Butter Cookies

Serving size: 24

Total Time: 45 mins

  • 1 cup unsalted butter

  • 3/4 cup sugar

  • 3/4 cup brown sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 3/4 cup smooth peanut butter

  • 1/3 cup cocoa powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 1/4 cups all-purpose flour

  • 1 cup semisweet chocolate chips

Step 1: Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or grease a baking sheet.

Step 2: In a standing mixer fitted with a paddle attachment, cream the butter and sugars, until combined. This should take about 2-3 minutes.

Step 3: Mix in the eggs and vanilla, whip for 5 minutes or until the batter has slightly increased in size and is fluffy.

Step 4: Whip in the peanut butter until smooth. Then fold in the flour, cocoa powder, soda, and salt. Fold in the chocolate chips.

Step 5: Scoop 1 tablespoon of cookie dough per cookie on the cookie sheet and bake for 10 minutes. The cookies won't spread too much so you can flatten the dough balls slightly to form the shape you prefer. The peanut butter in the cookie makes the dough drier so the cookies shouldn't take long to bake. Be careful not to overbake because the cookies will become too dry and crumbly. Let the cookies cool and enjoy!
