Brown Butter Chocolate Chip Cookies

Updated: May 26, 2022

My all-time favorite sweet dessert is a great chocolate chip cookie. This recipe is more time-intensive than a classic cookie recipe but it is worth the time.

The key to this recipe is to brown the butter in a saucepan before making the dough. I learned a few years ago that browning butter can elevate any baked good. It gives the cookie a caramel, nutty, and toffee flavor. This addition makes the cookie taste so rich and yummy. You will have your friends and family asking for seconds.

I have so many chocolate chip cookie recipes and by far this one is my favorite. These cookies are rich, flavorful, and good! These cookies will be life-changing! I have baked these cookies for many of my friends and these cookies are a huge hit!

Tips for this recipe:

  • Brown Butter - brown butter really makes this cookie stand out. Brown butter brings out this toffee and rich flavor in the batter. It is nutty, sweet, and toasty in flavor. The most important part about working with brown butter when baking is to make sure the butter is completely cooled before working with it. You don't want to cook your egg when making this cookie dough.

  • Dark brown sugar - dark brown sugar brings out a rich molasses flavor in the cookie. I like working with dark brown sugar better than light brown sugar. Sometimes I will leave out the granulated sugar or I mostly use brown sugar in my cookie dough because it forms a softer and tastier cookie. Light brown sugar still works in making cookie dough so if that is the only sugar you have, you can use it.

  • Chilling the dough - refrigerate the dough! This is the most important step. Because the recipe uses melted butter over soft butter the cookie dough will be warmer than usual. If you bake right away you will get a flat cookie that does not taste good. So trust me, refrigerate the dough!

  • Cinnamon - This is an optional spice to add to the cookie dough. I sometimes like to add cinnamon because I love this spice and I like to taste a hint of cinnamon in every bite.

Brown Butter Chocolate Chip Cookies

Serving size: 24 cookies

Total Time: 55 minutes

  • 2 sticks of butter (1 cup)

  • 1 1/2 cup dark brown sugar

  • 1/2 cup of sugar

  • 2 eggs

  • 1 teaspoon vanilla

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 2 cups flour

  • 2 cups of semi-sweet chocolate chips

  • 1/4 teaspoon cinnamon (optional)

Step 1: Brown the butter in a medium saucepan for about 10-12 minutes. Butter will give off a nutty aroma and turn slightly brown (be careful not to burn). You will see the butter create a white foam and then small brown bits will form. Stir this constantly over heat until brown. Let cool for 2 minutes in a separate bowl.

Step 2: In a mixer fitted with a paddle attachment, combine sugars and butter (you can also mix by hand). Then add the eggs and vanilla (make sure the butter is cool before mixing in the egg).

Step 3: Mix in the dry ingredients and fold in the chocolate chips. Refrigerate for at least 30 minutes to an hour. You must refrigerate this cookie dough recipe.

Step 5: Once the dough is ready, preheat the oven to 350 degrees. Add drops of cookies to a baking sheet and cook for 10-12 minutes or until desired cookie consistency.
