Often I am out of fresh yeast but I find myself craving fresh bread. I always have beer stocked in my cabinet so that I can make bread at any time. Beer acts as a self rising agent and is a great leavening agent. During the pandemic, it was hard to find just about anything and yeast was one of those items I couldn't get in the supermarket. This is my quick fix for making a loaf of bread. You can play around with this recipe and add different flavors.
Cheesy Olive Beer Bread

1/4 cup (1/2 stick) unsalted butter, melted
3 cups flour
2 tablespoon white granulated sugar
1 tablespoon baking powder
1 teaspoon garlic powder
1 teaspoon fresh ground pepper
1 teaspoon kosher salt
1 teaspoon of dried parsley flakes
1/2 cup Kalamata olives, roughly sliced (or any olives of your choice)
1/2 cup finely grated medium cheddar cheese
1 1/2 cups (12 fluid ounces) beer, 1 bottle
Step 1: Preheat the oven to 375 degrees. Spray a 9 x 5-inch loaf pan with half the melted butter.
Step 2: Place the flour, sugar, baking powder, garlic powder, parsley, pepper, and salt in a large bowl. Add the chopped olives and cheese.
Step 3: Pour the beer into the bowl on top of the dry ingredients and stir together with a large spatula until a dough forms. Scrape into the prepared loaf pan and then brush the remaining butter over the dough (you can skip this step if you don't care about having a golden brown top).
Step 4: Bake in the oven for 50 minutes or until a toothpick inserted in the middle of the loaf comes out clean. The bread stays fresh for 3 days in an airtight container and then slice and freeze for storage.
