Broccolini with Cucumber Noodles and Peanut Sauce

This is gluten-free noodle dish is light, nutty, and refreshing to eat for a quick weeknight meal.


I love when I find a great recipe that is tasty and healthy to eat. This dish requires little work to prepare and is enjoyable to eat. I love these different textures from the crunchy broccolini and light cucumber noodles.


How to make cucumber noodles?

Cucumber noodles are easy to make and provides a different texture in salads. To make cucumber noodles all you need is a Y-peeler. You can slice lengthwise along the cucumber until you hit the center. I leave out the center of the cucumber to remove the mushy parts in the dish. You can also use a mandoline or spiralizer to make cucumber noodles. You need a large English cucumber to make these noodles because Persian cucumbers are too small to make noodles.

I enjoy eating big heavy dishes that are filled with cheese or pasta or sauce and will last me for days with leftovers. I needed a break from my normal rotation of big dishes and this was the perfect dish! It is filling, enjoyable to eat, and refreshing. I added extra spice to the broccolini by using red chili flakes.

 

Broccolini with Cucumber Noodles in a Peanut Sauce

  • 3 bunches broccolini or 1 head of broccoli

  • 3 garlic cloves

  • 2 cucumbers

  • 1 tablespoon honey

  • 1 tablespoon soy sauce

  • 1 red chile

  • 1 tablespoon sesame oil

  • 1 lime

  • Peanuts, for topping

Peanut Ginger Sauce:

  • 6 tablespoons peanut butter

  • large thumb size piece of ginger

  • zest and juice of 1 lime

  • 1 tablespoon soy sauce

  • 1 tablespoon maple syrup

Step 1: Prepare a pot of water to boil. Trim the broccolini and make an incision down each stalk to split in half. If you are using broccoli chop into medium to large chunks. Add to boiling water. Drain and set aside to cool.


Step 2: Heat a pan over medium heat with oil. Finely slice the garlic and add to the pan. Fry for a couple of minutes. Set aside.


Step 3: Use a Y-peeler to peel each cucumber into ribbons, stopping when you get to the watery middle part.


Step 4: To make the peanut sauce, whisk peanut butter with 1/2 cup of warm water, grate the ginger, add all the other ingredients, and mix well. Add a little water if needed. The sauce should be a heavy-cream consistency.


Step 5: Heat a saute pan and toss the broccolini with honey and soy. Chop the red chile and add the broccolini along with the sesame oil. Place on the pan and cook for a couple of minutes until the broccolini is cooked and slightly charred.


Step 6: Add the charred broccolini and cucumber into a dish and top with crispy garlic and peanut sauce. Finish with the zest of lime and peanuts.
