Challah French Toast with Berries and Yogurt

After the holidays I always have so many leftovers. I had lots of challah bread leftover from the Rosh Hashannah dinner so I made challah french toast for brunch!


Breakfast food is one of my favorite foods to make. I grew up making different kinds of pancakes, french toast, cinnamon rolls, and all the sweet breakfast options for my family on the weekends. Who doesn't enjoy waking up to warm sweet challah french toast?


Challah french toast is easy to make and is a delicious brunch dish to make for friends. There are many changes you can make to this dish. You can use cinnamon swirl challah or add sugar on top to make it extra sweet. Personally, I like my challah french toast simple, fluffy, and light. I like to top the french toast off with a bowl of yogurt and berries which adds a light and fresh taste to the dish. Another option if you are in a rush in the morning is adding the challah slices to a baking dish with the egg, milk, cinnamon (optional to sprinkle sugar) mixture and baking in the oven. Enjoy making this tasty breakfast!




 

Challah French Toast

Serving size: 4

Total Time: 30 minutes

  • 3 eggs

  • 1/2 cup milk

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon pure vanilla extract

  • Pinch of freshly grated nutmeg

  • 2 1/2 tablespoons unsalted butter

  • 4 slices of challah

Toppings for serving:

  • Pure maple syrup

  • Strawberries or any berry you prefer

  • Yogurt

  • Honey

Step 1: In a medium shallow baking dish or bowl, beat the eggs with the milk, cinnamon, vanilla, and nutmeg until blended. Working with 1 challah slice at a time, soak the bread in the egg mixture, turning several times.


Step 2: Meanwhile, melt the butter in a large heavy skillet until bubbling. Add 2 of the soaked challah slices and cook until golden brown on the bottom, about 2 minutes. Turn and cook until golden brown on the second side, about 2 minutes longer. Repeat with the remaining egg-soaked challah.


Step 3: Mix about 1/2 cup of yogurt with chopped berries. Make sure there is a balanced berry to yogurt ratio. Drizzle honey on top.


Step 4: Plate the challah french toast with the berries and yogurt and top with maple syrup.
