These Chai Latte Spiced Cookies are so delicious and spiced to perfection! I love baking cookies that are inspired by different flavors.
These cookies taste like a fall chai latte at your favorite coffee shop but these are in cookie form! I would highly recommend making these right away. Once you make these you will be hooked and won't be able to stop the urge to take another bite I absolutely love these cookies because it merges my two favorite flavors, masala chai spice, and chocolate. What is Chai Spice?
When I traveled to India I was so excited to try chai tea that is made in India. When I got there and I would order chai tea every person would look at me like I wasn't making sense. I quickly learned that "chai" means "tea" in Hindi. So all the waiters were confused because I was ordering a generic tea and not specifying which kind. To me, chai tea means a tea filled with flavor and spices. The spices that I like in my tea are cloves, cinnamon, black pepper, ginger, and cardamon.
So when I added all these fabulous spices into a chocolate chip cookie it came out tasting amazing! These cookies taste great on their own and great with a hot cup of tea.
Chai Latte Spiced Cookies
Serving size: 24 cookies

3 1/3 cups all-purpose flour
1 1/2 teaspoon baking powder
1 1/2 teaspoons baking soda
2 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon salt
1 cup unsalted butter, melted and cooled slightly
1 1/2 cups firmly packed brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
12 ounces dark chocolate chunks or chocolate chips
Step 1: To a medium bowl, add the flour, baking powder, baking soda, ground ginger, ground cinnamon, cardamom, cloves, allspice, and salt together. Set aside.
Step 2: To the bowl of a stand-up mixer with the paddle attachment or you can mix by hand add the melted butter, brown sugar, and white sugar. Beat together until nice and fluffy, about 3 minutes. Add the eggs, one at a time, until combined. Pour in the vanilla extract and mix.
Step 3: Mix in the flour mixture until combined. Fold in chocolate chunks or chips. Transfer the dough to the fridge to chill for 30 minutes to an hour.
Step 4: Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Using a medium cookie scoop, scoop out balls of dough. Place in the oven and bake for about 7 to 8 minutes. If the dough is super cold, it may need up to 10 minutes to bake. They should be light to a medium golden brown.
