Buttered Popcorn Cookies

When I read about popcorn cookies, I thought what a strange mixture and I didn't think these cookies taste good. However, I like popcorn and I like cookies so I thought I would try this combination. It turns out these cookies are absolutely delicious! The sweet taste of the cookie mixed with the savory crunch of the buttered popcorn makes these so yummy! I would highly recommend giving these cookies a try. Maybe even add white chocolate chips or semi-sweet chocolate chips. Next, I am looking to try those potato chip cookies.


 

Popcorn Cookies

Serving Size: 24 cookies

Total Time: 45 minutes

  • 1/4 cup of cooked buttered popcorn (optional: you can make this fresh or pre-popped)

  • 1/4 teaspoon salt

  • 1/2 cup (1 stick) butter, softened

  • 1/2 cup packed light brown sugar

  • 1/3 cup granulated sugar

  • 1 large egg

  • 1/2 teaspoon vanilla extract

  • 1 1/4 cups all-purpose flour

  • 1/2 teaspoon baking soda

Step 1: Cook the popcorn. Either microwave or freshly popped.


Step 2: Preheat oven to 350 degrees. In a large bowl, cream together butter, sugars, egg, and vanilla extract. In a separate bowl, whisk together flour and baking soda. Add dry ingredients to butter-sugar mixture. Fold in the cooled popcorn kernels so they're evenly distributed.


Step 3: Place heaping-tablespoon-sized rounds of dough onto a parchment-lined baking sheet. Bake cookies for 10-12 minutes, until the edges are light brown. Let the cookies cool and then Enjoy!
