The inspiration...

Buckeyes are a classic dessert that is popular in the midwest. There is a tree called the Ohio Buckeye and it produces a nut called a buckeye. The name comes from how the nut looks which is like an eye with a dark brown circle on the outside and a tan dot in the center. These brownies are inspired by the buckeye tree in Ohio. There are many desserts made after the buckeye because it is a tradition in Ohio.


These buckeye brownies are rich and filled with so much chocolate deliciousness! The brownies are thick & chocolatey, layered with a salty peanut butter flavor, and topped with a chocolate ganache. They are unbelievable!

Yes, these brownies are extra work. You first make the brownie layer and wait for it to cool. Then you make a peanut butter layer and then a chocolate ganache. I promise these brownies are worth the wait. They are like eating a large Reeses candy but richer and better! These brownies are the best thing ever! You will need to try them out and add them to your brownie recipes. I love brownies and I love brownies with extra layers. It is a nice surprise and these brownies are loaded with so much sweet goodness!

A few tips...

  • Don't over mix - the key to making the perfect brownies is to have more chocolate and fat to flour ratio. You want to create a rich fudgy brownie. Those are my favorite. To do that it is important to not overmix the batter. I have to say I overmixed my batter and thus my brownies were more on the cakey side.

  • Cocoa powder - splurge on high-quality cocoa powder. It will make all the difference in the brownies.

  • Box brownies - skip the brownies step and use box brownies to make the base layer. You can make this recipe easier and faster if you want to use box brownies. Although, for me, there is nothing like making homemade brownies.

  • Peanut butter - I use all-natural peanut butter that does not have any added sugar or salt. These peanut butter are drier so I had to add extra butter to smooth out the peanut butter layer. Also, if you use a skippy-like brand you won't need to add as much powdered sugar. I recommend tasting this layer and adjusting the sugar quantity based on your liking.

  • Chocolate chips - I love to add chocolate chips into my brownies. I like the extra creaminess of the chips. If you prefer a smooth brownie consistency you can leave out the chocolate chips.

  • Storage - these brownies can be stored in the fridge or on the counter for 4 days in an air-tight container.

Brownies:

  • 1 1/4 cups unsalted butter

  • 2 1/2 cups light brown sugar

  • 4 large eggs, room temperature

  • 1 1/2 cups cocoa powder

  • 3/4 teaspoon salt

  • 2 teaspoons vanilla extract

  • 3/4 cup all-purpose flour

  • 1/2 cup semi-sweet chocolate chips


For The Peanut Butter Layer

  • 3/4 cup creamy peanut butter

  • 4 tablespoons unsalted butter

  • 1 cup powdered sugar

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

For The Chocolate Ganache

  • 1 1/2 cups semisweet chocolate chips

  • 3 tablespoons heavy cream

Step 1: Preheat the oven to 350 degrees. Line an 8x8 baking dish with parchment paper.


Step 2: Make the brownies: Melt the butter in the microwave. Whisk in the brown sugar and sugar, until the mixture is smooth. Once the butter and the sugar are slightly cooled, whisk in the eggs and vanilla, just till combined.


Step 3: Fold in the flour, cocoa powder, and salt. Do not over mix. Mix the dry ingredients until they are smooth and the brownie batter has come together. Bake for 45 minutes. Check the brownies at 40 minutes. The brownies will be done when you can insert a fork in the center and it comes out clean. Allow brownies to cool.


Step 4: Prepare the peanut butter layer: In a saucepan over medium heat, melt the butter and peanut butter together. Mix in the powdered sugar, salt, and vanilla and stir until smooth. Use an offset spatula or a spatula to smooth the peanut butter mixture on top of the brownies. Set aside.


Step 5: Prepare the ganache: In a saucepan over low heat, melt the chocolate chips and heavy cream until the mixture is smooth. Be careful not to burn the chocolate. Smooth the chocolate ganache over the peanut butter layer and spread into an even layer. Place the brownies in the fridge and cool for 30 minutes to 1 hour. Slice and enjoy!
