Brown Butter Blondies

WOW! I can't express how mouthwatering and delicious these blondies are! I made these quickly to bring to game night and they were a huge hit. This is a classic chocolate chip cookie in brownie form and what could ever go wrong. The brown butter addition makes these cookies taste like caramel and they melt in your mouth. If you don't serve this to friends, you will end up eating the whole dish. I know I came close to eating all these blondies.


 

Brown Butter Blondies

  • 2 sticks (16 tablespoons) unsalted butter

  • 1-1/2 cups packed dark brown sugar

  • 1/4 cup granulated sugar

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 1 3/4 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon kosher salt

  • 2 cups semi-sweet chocolate chips

Step 1: Melt the butter in a small saucepan over medium-high heat, then continue cooking, swirling the pan occasionally. Always watch the pot when browning butter. At first, it will simmer and look foamy, then the foam will subside and the solids at the bottom will begin to brown, 10 to 12 minutes total. The time will vary depending on what kind of stove you are using. For me, on an electric stove, it takes a little longer to brown the butter. Let the butter cool in a separate bowl.


Step 2: Preheat the oven to 350 degrees and grease a 9x13 baking dish or an 8x8 baking dish.


Step 3: Mix 1 1/2 cups packed dark brown sugar and 1/2 cup granulated sugar to the butter. Add 2 large eggs and 2 teaspoons vanilla extract.


Step 6: Add dry ingredients (flour, baking powder, and salt). Sometimes I leave out the baking powder if I want the brownies to be denser. Fold in the chocolate chips.


Step 5: Scrape the thick batter into the prepared pan and spread into an even layer. Bake in the larger dish for about 20-25 minutes or in the smaller dish for about 35-45 minutes, until browned on the top and a toothpick comes out smooth.
