Blueberry Pie Oatmeal

Oatmeal that tastes like dessert for breakfast! What could be bad? This is like eating a luxurious blueberry pie in oatmeal form. It is sweet, spicy and so tasty! It is an easy breakfast meal to whip up that is so satisfying to eat.

I love breakfast! It is my favorite meal because there are so many desserts you can make for breakfast. Have you ever had blueberry pie with the bursting juices of the blueberry spilling all over the plate? A deliciously warm and juicy pie is what inspired this breakfast creation.


It has warm crushed blueberries marinated in syrup flavored with cinnamon on top of fresh oatmeal. It is so addicting to eat. You won't want to stop eating this healthy breakfast. I made this every day for a week because it tastes that good!


I didn't grow up eating oatmeal for breakfast. I was the bagel and butter kind of girl and I still love to eat bagels for breakfast. When I first started eating oatmeal, I only liked those cups of oatmeal grab-and-go boxes because they were filled with tons of sugar. I quickly discovered that it is so easy to make a fresh pot of oatmeal at home that tastes amazing! Oatmeal literally takes 5-7 minutes on the stove to make or you can microwave it. In my opinion, everything tastes better when it is cooked on the stove. This oatmeal dish is a creative way to add flavor to a classic oatmeal breakfast. Also, it is very healthy filled with fresh fruit, natural sweeteners, and nuts!

A few tips:

  • Fruit topping - while I was inspired to make this from blueberry pie, you can use any fruit on top of this oatmeal. I love a bowl of mixed berries so I often add raspberries, strawberries, and blueberries to the fruit topping.

  • Nut butter - to add more protein and flavor to the oatmeal base, you can add nut butter. I love almond butter so I mix it into the oatmeal before topping it with the fruit.

  • Marinating the fruit - you can top this oatmeal with fresh fruit and syrup and call it a day, however, I think this meal tastes extra special when you caramelize the blueberries on the stove in the maple syrup. Trust me! It tastes DELICIOUS!

Blueberry Pie Oatmeal

  • 1 cup oats

  • 2 cups milk

  • 1/4 teaspoon salt

  • 1 cup blueberries

  • 2 tablespoons maple syrup

  • 1 teaspoon cinnamon

  • 1/2 lemon, juiced

  • 1/4 cup almonds, sliced

Step 1: In a pot under medium heat, add the oatmeal, salt, and milk. Let the oatmeal mixture come to a boil and then reduce to simmer. Cook for about 10 minutes until oatmeal thickens.


Step 2: Add the blueberries to a bowl with maple syrup, cinnamon, and lemon juice. Add this mixture to another and under medium heat cook until the mixture reduces. It should become a jam-like mixture. You can slightly crush the blueberries so the juices flow out. Set aside.


Step 3: When the oatmeal is ready, add a spoonful to two different bowls and top with the blueberry pie mixture, and almonds. Serve warm and enjoy!
