Asparagus Scallion Pizza

Asparagus Scallion Pizza

The inspiration...

It is getting warmer outside and I find myself getting excited about farmer's markets and summer vegetables. I am trying to spend as much time outside as the weather gets warmer and sunnier. I took a trip to NYC and I am thoroughly enjoying long runs along the city edge. It is so peaceful and beautiful in the early mornings right before the city starts its day.


I love summertime Asparagus. To be honest, summer is the only time when I eat asparagus because it tastes so fresh and delicious. Asparagus on pizza is even better! I love how easy this recipe is to cook. It is fast to assemble and comes out tasting so satisfying!


For this recipe, you will need to find thicker asparagus stalks because it will be easier to peel the asparagus into thin strips. I have never done this to asparagus before and it came out tasting great! The asparagus is thin on the pizza that it cooks fast in the oven with the pizza and creates a nice crispy texture. You can slice up the asparagus very thinly at an angle if the stalks are too thin to peel.



Asparagus Scallion Pizza

I used store-bought pizza dough because I was feeling lazy. This recipe will taste great with any pizza dough, fresh or frozen. You can even use a tortilla for a thin flatbread pizza.


The chili scallion oil is absolutely DIVINE on this pizza! The fresh herbs paired with the crispy scallions are an excellent combination. You don't have to use crushed red pepper on this pizza. If you love spice as much as I do, it is what makes this pizza have an extra kick to it! This pizza is so easy to make and tastes so DAMN GOOD! Next time, I am going to double the recipe to make two pizza pies so I can have extras for leftovers.


 

Asparagus Pizza

Serving size: 4-6

Total Time: 30 minutes

  • 3-4 scallions, sliced

  • 4 tablespoons olive oil

  • 1/4 teaspoon crushed red peppers

  • 1 teaspoon sesame seeds

  • 1/4 cup parsley, chopped

  • 1 tablespoon basil, chopped

  • 1 tablespoon lemon juice

  • 1/8 teaspoon salt

  • 6 thick asparagus stalks

  • 1 store-bought pizza dough or homemade pizza dough

  • 1/4 cup gruyere cheese, shredded

  • 1/4 cup mozzarella cheese, shredded

Step 1: Preheat the oven to 450 degrees. Prepare a baking sheet for the pizza.


Step 2: Prepare the scallions by slicing them thinly on a cutting board. With a medium skillet on medium heat, add the scallions, olive oil, and crushed red peppers. Saute for about 5 minutes until the scallions start to crisp up. Remove the scallions from heat and then add sesame seeds, chopped parsley, chopped basil, lemon juice, salt, and pepper. Set aside.


Step 3: Prepare the asparagus, by taking the untrimmed end of the asparagus and taking a vegetable peeler to shave the asparagus into thin strips. Set the shaved asparagus aside.


Step 4: On a working surface, roll out the pizza dough into a 12-inch round pizza or any shape you prefer. Top with the asparagus and scallion mixture. Toss with the shredded cheeses on top. Bake for 10-15 minutes until the pizza is cooked and it is brown on top. Remove from heat and let cool for 2 minutes and then slice and enjoy!
