I had so many apples in my kitchen because I went apple picking this weekend! Apple picking is so much fun and it is one of my favorite fall activities. I made this apple cinnamon crumb coffee cake and it came out delicious! I ended up changing the original recipe quite a bit but I felt inspired by Broma Bakery's apple cake. There are a few important tips I would recommend for this recipe. First, bake the cake in a deep dish because the apple layers in this dish are spectacular and a deeper dish allows for the layers to come out. Second, be generous with your apples. The more apples the better! Lastly, add any citrus flavor to the cake. I added orange juice because it elevates the flavor of the cake. This cake is so perfect for fall and will last for a few days in the kitchen. Enjoy it with your coffee or for dessert!
Apple Cinnamon Coffee Cake
Serving Size: 1 (8 inches) square baking dish
Total Time: 1 hour and 10 minutes

Cake:
2 1/2 cups flour
1 1/2 cups sugar
2 teaspoons vanilla
3 teaspoons baking powder
1 teaspoon salt
2 eggs
2 cups plain yogurt
1/4 cup orange juice
1 stick butter
Apple Cinnamon Layers:
3-5 medium tart apples (either green apples or a baking apple), cut into small cubes
3/4 cup brown sugar
1 tablespoon cinnamon
a pinch of cloves
Crumb Topping:
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
5 tablespoons butter, melted
1 cup flour
Step 1: Preheat oven to 375 degrees. In a small bowl, mix together with a fork the cut apples, brown sugar, and cinnamon. Set aside.
Step 2: In a microwavable bowl, melt the butter until soft. Add sugar first and let cool. Then add eggs, vanilla, baking powder, yogurt, orange juice, and salt. Once mixed, add the flour in batches, making sure to stir between additions.
Step 3: Mix all the ingredients to the crumb topping together. It will be a dry crumb consistency.
Step 4: Butter and flour a large bundt pan or deep dish. I used a 9x9 baking dish. Pour in half of the batter and sprinkle half of the apple cinnamon mixture over the batter. Add the remaining batter and then the remaining apples on top. Add the crumb topping. Bake for about 40 minutes to an hour, or until a knife comes out clean when inserted into the cake. The very top part might be a little wet but that is ok. This cake can take longer to cook in the oven because of the juices from the apples. I would cover the cake after 40 minutes so the top does not burn. Enjoy this cake right away or for the week! It gets better every day.
