I feel inspired to find healthier ways to make different kinds of desserts for all dietary restrictions and that is how these cookies came about. I love experimenting with different elements in the kitchen and lately, I am trying out gluten-free recipes. A natural substitute for flour is almond flour which is a key ingredient in these cookies.

Of course, these cookies are filled with tons of rich chocolate chips because chocolate is my favorite! My husband could not even tell that these cookies were gluten-free. It is like eating a peanut butter chocolate chip cookie but with almonds. I paired almond butter with almond flour because the two balance each other really well. One problem I often have with gluten-free flours are they add too much flavor to the cookie. Almond flour does add a nutty taste that is very distinct. I want the almond flavor in these cookies but I want it to balance well so the almond butter rounds out the flavor. These are the very best Almond Butter Chocolate Chip Gluten-Free Cookies!
A few tips
Creamy almond butter - I used the whole foods brand of almond butter because it is a very smooth butter. It makes for a very smooth and creamy consistency in the cookie dough. A creamy butter will be better in these cookies than those types of almond butters that are on the more chunky side.
Dark chocolate chips - I love dark chocolate because it is stronger in chocolate flavor and has less sugar. This is a personal preference but I think dark chocolate pairs really well in these cookies. Any kind of chocolate will work, too!
Don't overbake - Almond flour does absorb more liquid faster than regular flour so be careful not to overbake the cookies. These cookies only require 8-10 minutes in the oven. The cookies will be underdone in the middle but the center will set after you have removed them from the oven to let cool.
Storage - These cookies store well in an air-tight container for the week.
Almond Butter Chocolate Chip Gluten-Free Cookies
Serving size: 20 cookies
Total Time: 1 hour and 10 minutes
1 3/4 cup almond flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup brown sugar
1/3 cup coconut oil
1 egg
1 teaspoon vanilla extract
1/2 cup creamy almond butter
1/2 cup dark chocolate chips
Step 1: Preheat the oven to 350 degrees. Line a baking pan with parchment paper.
Step 2: In a large mixing bowl, mix together the coconut oil, brown sugar, egg, and vanilla extract. Mix until smooth.
Step 3: Mix in the creamy almond butter until fully combined. Next, fold in the almond flour, baking powder, and salt. Mix until all the ingredients come together.
Step 4: Fold in the chocolate chips. Refrigerate the dough for 20 minutes.
Step 5: Then, scoop 2 tablespoons of cookie dough per cookie on the baking sheet. Bake for 8-10 minutes. The cookies will be slightly underdone in the center and set on the outside. Let cool for 5 minutes. Enjoy!
